 TACACHO!

 Tacacho is a typical dish of the Loreto region and it is my favorite dish, Tacacho is a dish based on plantains and pork lard, it is usually accompanied with jerky, pork rinds, fish, egg or chicken grill, always with a onion sauce or cocona sauce.

The tacacho is well known nationally, I don't know anyone who doesn't like it!

It is one of the tastiest dishes in the Peruvian jungle. It is a simple dish, quick to prepare and rich in proteins, minerals and fats that is eaten daily.

The tacacho is native to the Peruvian jungle area and widely spread in the rest of the country. The term «tacacho» probably derives from the Quechua «taka chu», which means «the beaten».

To make the tacacho, a dough composed of roasted or cooked plantains, lard, as well as salt to taste is prepared. Bananas have previously been charcoal roasted although they are sometimes cooked in water.

The base of this preparation rests on plantains, also known as bellacos, which grow in the area and are characterized by their large size, their hardness and their lack of flavor when they are raw or fried.

In my house it is usually eaten for breakfast, with cooked banana and cooking oil, salt and egg accompanied with onion sauce and strong coffee.
